‘Red Echo Date’ #2

Welcome back to this week’s echo date!

red quote 2

How do you deal with failure?

Life is itself a beautiful journey…but sometimes no matter how much we try, our destination seems to get further away from our reach.

Along the way we find challenges, obstacles and failure…

What is that makes us stronger, is it the journey or the destination?

I always thought that the path towards our goal makes us appreciate it more when we’ve achieved it.

But what if the road just doesn’t go there…what if there are too many failures?

What if…too many doors are shut and less light is coming in through the windows?

Do you look for a better key or just try the next door?

I am inviting you to join me this week for the Red Echo Date…share your thoughts about today’s quote or share a new one that you’ve experienced this week:) Photos, stories, quotes…it’s all down to you!

‘Inspiration from across…’

Inspiration from across...
Inspiration from across…

This week two of my assignments for Blogging 101 were to visit and comment on other blogs and be inspired:) Easy, you might say…I agree…only if they weren’t so many amazing bloggers out there who inspire others:)

The assignment – Get Inspired By the Neighbours

Since joining the Blogosphere, I’ve discovered so many extraordinary people who amaze me every day with their talent and creativity…it feels like I embark every day on a journey of self discovery and I always end up with a great achievement…might that be a new way of writing…a new perspective of a landscape or a new challenge to follow!

Challenges…how I love them:)

I’ve always loved a good challenge…something that brings me out of my comfort zone and makes me look at the world from a different angle!

So, today I’ve decided to mention a few of the people who have been an inspiration and who keep me coming back for more:)

Lucile and her inspirational Photo101 Rehab challenge, from which I can’t stay away so I’ve become a happy patient of The Clinic…I definitely recommend it, if you present the following symptoms as carefully described by Albert from the blog Trigger Happy,: “Withdrawal symptoms may include the incessant need to carry your camera everywhere with you, the need to wake up in the wee hours to take photos during the golden hour, and checking up on others you met during the course to see what their newfound knowledge has brought fruit to.”

Andy and his Dark | Side | Thursday…again a great writing or photo challenge that takes you across, to a different point of view. So, if you enjoy a writing challenge or if you’re just curious of what could be on the other side, join us:)

Jennifer and her amazing blog that it’s just a living proof of her talent and determination! She hosts a weekly photo challenge, One Word Photo Challenge, that I’ve recently joined because I am still developing my endless love for the beautiful visual that is life:) Take a peak and join the boat that sails away to the unknown…

Life is indeed beautiful…

…and every day can be your chance to discover the world…share what you love the most and be a better version of yourself!

As I seem to finish most of my posts with a quote, from this week I’ve added a new column to my blog, called Red Echo Date, where I will share weekly, one quote that describes an experience I’ve lived or just words that I can’t seem to shake away:)

Image_Fotor

‘The Passage’

Dark | Side | Thursday

Screen Shot 2015-05-30 at 23.58.18

Join us and cross the boundaries of your comfort zone…discover your other side!

This post it’s linked to a challenge that Andy started a few weeks ago…I love to go beyond my usual style of writing and uncover something new!

Part One of this story you can find it here…Dark Corner.

2015-06-14 08.47.44-1

The wind stopped…it was quiet.

…her heart started racing, her mind was juggling several scenarios…none of them were in her favour.

She knew he was getting closer but all she could hear was the sound of the sword cutting through the heavy fog, which made it impossible for her to see her nemesis.

Only if she could have found the house…she would have been saved.

It was too late…there was no time to run.

She looked up, her eyes turned red…she felt a sudden power rushing through her veins; maybe it was the impossible situation she found herself in or just the intense desire to stay alive.

She pulled out her weapon…made a few steps back, not because she wanted to run…but because she had to defend herself no matter what the consequences might be.

As his steps were more real…she could now see a shape of a man walking towards her, she could hear his breathing…she couldn’t stop stepping back.

All of the sudden she realised what was at the end of the alley…the passage.

She never experienced it before…her ancestors told fables about it…

It never crossed her mind that the passage was real.

The legend was saying that whoever crosses the bridge will have a chance to undo all the wrongs in their past life…was that true?

It didn’t matter now…an opportunity presented itself…she had a choice; stay and fight with the possibility of defeat or believe that the passage might undo all the dark corners she took throughout her life.

Maybe she had a chance…the light on the other side could be her salvation…

For the first weekend our assignment was to continue and connect with other bloggers, share the love, write something different and take our camera for a walk…hope that I managed to do all this…

Happy reading:)

‘Tasty cuisine’

Welcome back to my secret Kitchen Corner…where I prepare delicious recipes just for you:)

2015-06-06 17.59.20-1

Today I will share with you one of my all time favourite…Chicken breast stuffed with coriander cream cheese on a bed of mushroom sauce.

I love cooking this dish because it has so many flavours and fresh herbs which makes it an absolute pleasure to all your senses:)

FullSizeRender-4-1

Ingredients: One chicken breast/person, parma ham, cream cheese, fresh coriander finely chopped, salt, pepper, rosemary and oregano, double cream, 300 g mushroom, fresh salad leaves, plum tomatoes, radish, lemon juice.

Method: Pre-heat the oven.

For the chicken breast, prepare the stuffing first by mixing the cream chess and coriander, I usually put 2 table spoons of cream cheese/ chicken breast. Cut the chicken breast on the side half way through and stuff it with the cheese paste, wrap each breast in 2 slices of parma ham.

I never put salt or pepper on the chicken, because the parma ham it’s already salty and the stuffing carries so much flavour.

Before placing the chicken in the oven I usually seal it for a couple of minutes in a non-stick hot pan with a bit of fresh rosemary and oregano.

2015-06-06 18.03.38-1

Once the parma ham is slightly crispy, place the chicken in the oven for about 10-15 minutes, preferably covered.

You can now start to prepare your mushroom sauce.

Use the same pan for the sauce, in which you’ve sealed the chicken breast, it will still have some flavour and all the herbs you’ve previously used. Add a bit of oil, place the chopped mushrooms, salt and pepper and sweat them for about 5-7 minutes.

2015-06-06 18.14.38-1

Just before removing it pour in the cream, for 300 g of mushroom you will need around 150 ml of cream.

The quantities can be changed according to the number of diners:)

Let it simmer over very low heat for about one minute…and you are ready.

To accompany this dish I prepared a light salad with plum tomatoes, radish and fresh salad leaves with a drizzle of lemon juice.

Serving suggestion:

Place the mushroom sauce first, cut the chicken breast in slices and arrange them on the bed of sauce. Create a beautiful effect with the fresh colourful salad on the side:)

I love cooking and baking as you probably already know but mostly I enjoy sharing everything I know with all of you in the hopes that you might discover something new that you’ve never tasted before:)
