Welcome back to my little ‘Secret Kitchen Corner’…that’s not a secret anymore:)
Today I have something really simple and delicious for you!
…a tasty side dish that you can prepare without any effort and which can accompany anything from red meat to fish or even on its own, whenever you have a craving for comfort food.
I’ve found this recipe in one of my close friends recipe book and I just loved it…there is many ways to do it, I choose to take it to another level to intensify the taste!
Looks simple but it tastes absolutely amazing:)
Ingredients: 1 potato/person with skin on, 2 tbs olive oil, rosemary, 1 clove of garlic, oregano, salt, white pepper, butter. The quantities shown here are for one large potato!
Method: Cut the potato as shown in the picture very gently keeping the bottom as a whole ( resembling to a harmonica ). Heat up the olive oil, add the rosemary, oregano, crushed garlic and white pepper. Use a wooden spoon to mix it for a few seconds until the olive oil is infused with the herbs.
It only takes a few seconds…make sure you do not burn the herbs:)
Preheat the oven.
Place the harmonica shaped potatoes on a baking paper and then transfer them to a baking tray.
Pour over the herb infused olive oil and bake in the oven for 1 hour. They are ready when they start to turn golden; if you have left some olive oil, you can brush them during baking, if you see they are turning too dry.
Once you’ve removed them from the oven, sprinkle sea salt for taste and cut thin slices of butter and place them between the layers…this will melt in seconds and soften the potato.
Serve immediately next to a beautiful steak…stuffed chicken breast…oven baked fish…or just on its own with some tasty cheese on top:)

There are moments when doing everything right it’s not that straight forward…when our journey it’s not a path we laid out…when how we meet our goal depends so much on others.
Every now and then we stumble upon situations that need a bit of strategy from our part…we cannot do everything on our own and occasionally we find ourselves playing a contest.
The question is…are we in it to win it?

The night covered everything with a dark silk blanket, that seemed to look more like a prison than a shelter.
All he wanted was to close his eyes and rest his body after a long day of walking in the sun…the journey he has chosen wasn’t easy but the destination will be his fulfilment of a promise he made a long time ago.
He looked at the old ceiling…it could collapse on him any minute. It was broken and old, the walls around the room were a thing of the past, you could see the metal that was holding the building together, rusty and ready to give up…
He didn’t think this through…he could have walk until the next village.
He was too tired and his feet were full of bleeding blisters…
The old façade of the Tower made him stop and he felt somehow drawn to it…he spent too much time exploring the inside and now he had no choice than to spend the night here.
He placed his sleeping bag in the corner, turned off the flash light and slowly closed his eyes.
…it was a full moon and the silence around captured him into a deep sleep, until a suave voice whispered in his ears…”You are mine!”
His heart stopped and he couldn’t move…he was afraid to open his eyes..
This could be a nightmare…but it wasn’t!
He raised his head as he felt a cold touch over his body…he saw no one.
Suddenly a massive shadow was climbing up the wall from the corner of the window…slowly getting closer and closer…
He couldn’t stand up from the panic…
He pulled his knee up, closed his eyes and buried his face, continuously repeating the same thing…
“This is a nightmare….This is a nightmare…This is a nightmare”.
