‘Sweet sweet red platter’


The best ever shortbread recipe out there!

I’ve never been a huge fan of shortbread, I mean what’s exciting about baked butter, loads of butter…?

I was thinking like this until I discovered this amazing recipe…when we’ve finished baking, it looked like this!

We baked three kind of shortbread for a friend’s birthday!

Here is the recipe for Chocolate Covered Cranberry and Pistachios Shortbread

Ingredients: 

Shortbread:
1/2 cup Brown Sugar
1 cup Butter (Use the best one you can get you’re hands on, it really makes a difference!)
2 cups Whole Wheat Flour
Topping:
100 g Dark Chocolate
 25 g White Chocolate
 1/3 cup Chopped Dried Cranberries
 1/3 cup Chopped Green Pistachios

Method:
 Pre-heat your oven to 175°C, line a baking tray with parchment paper. Mix together the butter and sugar, starting on low and then gradually increasing the speed until they’re well combined. Add in the flour and work it with your hands for 3-5 minutes until the dough is uniform.
 Put the whole dough onto your baking tray, pressing it down into a rectangle, then top with another sheet of parchment paper and roll it out into a rectangle with a rolling-pin. It should be  around 0.2 inch/0,5 cm thick. Once done cut it into the typical finger shape with a long, sharp knife.
 
 Bake for 20-25 minutes until golden on top. Remove from the oven and let cool for 5 minutes. Melt both chocolates individually. Spread the dark chocolate on the shortbread and sprinkle with the cranberries and pistachios.
Decorate with the white chocolate: dip a fork in the chocolate, and quickly wave it above the cookies without touching the surface, it will make it look really good.
Let cool for about 10 minutes, then finally cut the still warm shortbread apart and let them stand for further cooling until the chocolate hardens.

Our friend is a huge lover of shortbread, so it was a carnival of sweetness:)
We put together a platter, added some strawberries and clotted cream for amazing effect…you have to admit it looks pretty good and it tasted even better!
